Vine's vs opponent spellskite
The vines ability is always checking for it's owners opponent, not the owner of the creatures opponent. Basically you stop spellskite from being able to be targeted by it's owner, it can still be targeted by you.
spellskite is redirecting abilities and spells that you control, not spells and abilities your opponent controls

Love Vines of Vastwood as I kept having my Crusader's Oblivion Strikeed where Apostle's Blessing couldn't save them. Vines saved the third one though.

I don't think vines stops skite from redirecting it. It doesn't have to target a creature you control, so it's a valid target.
