I saw a list that curved Honest Rutstein into The Gitrog, Ravenous Ride. I kinda wanted to see Gitrog do something but always seemed like Golgari decks just want other things. But maybe there's something here.

If Gitrog's going to be eating saddlers, then maybe this is a good spot for Ratadrabik of Urborg to get a zombie clone of the eaten creature. Eating a Rutstein lets you get the Rutstein back to hand to cast it again. I've wanted to find a spot for Ratadrabik.

Mosswood Dreadknight and Edgar, Charmed Groom   seems like good saddlers to get eaten. Dreadknight you can get back through his adventure. Edgar transforms to make a few vampires before coming back. If Edgar gets zombie cloned the zombie isn't legendary so then you can have two of them, pumping each other.

Skyfisher Spider or Ruthless Lawbringer can be another way to enable eating your creatures for removal. Virtue of Persistence can be another way to get your creatures back with some removal tacked on.

I kinda feel like there's an opening for a package for evolving creatures here. Evolving Door can evolve creatures up the color count chain. Vivien on the Hunt can evolve creatures up the mana value chain. So a variety of costs/colors can be good. So cards like Mirrex or Thalia and The Gitrog Monster for color counts, and Gala Greeters Rutstein Skyfisher Junji, the Midnight Sky Vein Ripper Gruff Triplets and topping off the Vaultborn Tyrant for mana values.
