I don't have much experience competitively, but I run a variant of this deck, and I've been really happy with Hopeful Eidolon. It can be played early on or saved later to enchant a bigger creature. I would probably take out the Heliod's Pilgrims for them, because is it that important to find enchantments?

Yes, Heliod's Pilgrim is crucial for finding the aura you need at the time. It can turn a game loss into a turn 4-5 win.

Sometimes I need life, Heliod, sometimes card draw, Thassa, and the ability to attack to my hearts content, aqueous. I don't always start out with any of those cards in hand, the last few games aqueous form has been hiding on me.

What about Sage of Hours? Would that be good or would I need to add more cards for it to work?

Problem is that you would be swaying from your strategy. But it may work better in play testing. Try it out

Deck seems good, I don't think the addition of Sage of Hours will make it better, maybe it is good in some matches to be in the sideboard that I don't know about really. I think in terms of creatures it isn't better then anything you have in the main deck already.
I really like the Defiant Strike tech in the deck, cantriping seems good in the middle of combat with this deck.

Oh yeah, I'm set of I have 5 mana on Field, so I can just scry away things like land I don't need, and I can so some pretty ugly things when I can protect my creatures. by turn 3 I have a 5/5 unblockable with scry power.

I would put valorous stance mainboard over feat. I know this deck isn't supposed to be too interactive, but there are times when you just need to get rid of a threat, and valorous stance can do that while still giving you the option to protect and target your own guys.

It just doesn't work in my meta, dump a bunch of cards and dies to removal, plus I usually only get 2 - 3 creatures out.

how do you figure infinite turns with Sage of Hours? he worked with Sunbond in a lifegain deck, but here he needs to be targeted 5 times a turn (or 3 if siege is out) which doesn't add up.
Artful Maneuver and Center Soul might be worth while additions for the double heroic proc, and with all those spells, cards with prowess like Seeker of the Way or Monastary Mentor would be a useful edition and spread out the removal targets.

I can put 2 +1/+1 counters on him with citadel siege. And then I have a numerous amount of triggers. And I can usually get both sieges out while taking my turns. put aqueous form on him, attack, scry, damage, remove counters and repeat until death.
