Gitrog Monster EDH Deck:

Early Game: Set up ramp/protection and disrupt opponents with removal and land destruction to slow them down. I generally like to have at least one tutor in my opening hand so that we can win the game after we play The Gitrog Monster.

Mid Game: We should have our commander out at this time and use a tutor to find either Dakmor Salvage or a discard outlet like Noose Constrictor. If you have 5 black mana open after you cast a tutor and a way to dredge Dakmor Salvage then go ahead and search for Skirge Familiar and go for the Combo listed below to end the game with Exsanguinate.

End Game: If you got this far I will assume our Combo has been stopped by either exiling Kozilek, Butcher of Truths or The Gitrog Monster has been killed too many times. If this is the case we have two solid backup plans. The first is to sacrifice Centaur Vinecrasher or Lord of Extinction to Jarad, Golgari Lich Lord to end the game. The other is to win through combat damage from a large amount of tokens either Worm Harvest, Rampaging Baloths, or Titania, Protector of Argoth. The Final option is to look for Riftsweeper to reassemble a piece of the combo that has been exiled.

Combo Explained: The main combo is to have The Gitrog Monster and a discard outlet out. Discard Dakmor Salvage this triggers the draw which you can replace with Dakmor Salvage's Dredge trigger milling two cards and bring it back to your hand. If a land hits the graveyard from the dredge trigger then you can draw a card as well. Do this milling your entire deck and drawing cards until you dredge or discard from hand Kozilek, Butcher of Truths which allows you to do this forever. To finish look for a way to get Skirge Familiar in play and start discarding Dakmor Salvage to it to create infinite black mana and finish everyone at once with the worlds largest Exsanguinate.
