I think you misunderstand. The situation is that you already have a large amount of OTHER creatures attacking. If the Undead Alchemist was on the field then the damage your other zombies will do will turn into milling instead of real damage. If I attack with the army, then unsummon the alchemist it will then be normal damage and not turn into milling. I'm only unsummoning the alchemist, not all the other cards attacking.
