AisforAmity, First off, I like the Sign in Blood idea but I think I prefer the Scry from Read the Bones I might add another later.
As for minotaurs I recycle them using Palace Siege or Whip of Erebos so I don't think I have a problem there. My deck uses minotaurs but the other cards around turn 5 help lots allowing the way in front to be clear and add in damage from different sources.
Pure Minotaur tribal went out with Boros Reckoner this is only my r/b deck w/ a minotaur base.

"Wait until you SIEGE the enchantments in this deck,""You Sarkhan't hope to win now, man,""Shit, I'm about to lose. I guess you really Broke the Flames,""Welp, game is over. Going to scoop and be a Minotaur Skull-Leaver,"
Are you going for a "good" deck, here, or one that fits the theme of "minotaurs AND friends"? I think, unfortunately, it is going to be difficult to make a tribal competitive with only 15 tribal creatures. At least when the tribe is 100% creature-based like minotaurs.
Up the amount of minotaurs, maintain some card draw through Sign in Blood and keep a solid removal suite, and you'll be much more consistent.
+1, because I'm curious to see how this goes. My first "serious" deck was minotaur tribal, and was a blast to play. Good luck!
