Have you looked into Zhalfirin Commander as a pseudo-Lord or Knight of the Holy Nimbus for its ability to regenerate?

Zhalfirin Commander's ability costs WAY too much just to give a single Knight +1/+1. It's also underpowered compared to other 3-drop Knights.
Knight of the Holy Nimbus isn't that great. The 2-drop Knights I use offer more meaningful benefits.

On the other hand, there aren't a lot of 2-drop Knights that seem to meet your criteria to displace Accorder Paladin. Knight of Meadowgrain was already suggested by MetaphysicalxProdigy, though I don't see your response to that suggestion in your reply to him. Knight of Cliffhaven is another Level-Up, but one that provides Flying and Vigilance, rather than First/Double Strike.
I think that Lone Rider Flip wouldn't be an appropriate choice for this deck, despite filling the two-drop slot you were talking about fixing up. It's a 1/1, and your deck isn't geared to flip it.
Spectral Rider is another evasion choice, and Intimidate is a lot harder to deal with than its replacement mechanic Menace.

I really like Accorder Paladin's 3 power and battle cry. It hits harder and boosts my other Knights. I'm only going to replace it with something that at least can hit as hard.
Knight of Meadowgrain is an OK creature, I simply prefer Accorder.
Knight of Cliffhaven needs way too much mana. It's not as efficient as Student of Warfare is. Spending 3 mana to add +0/+1 and flying and another 9 just to have a Serra Angel is terrible.
Lone Rider Flip could work if I modify the deck to gain 3 life whenever I need to, but that would be cumbersome.
Spectral Rider is boring. It doesn't offer any benefits or hit hard. It's just a bear with evasion.

If Accorder Paladin works for you, that's great.
Knights have been my pet deck for a long time.
I end up back at the same conclusion for my own thinking that Meadowgrain is a 4 point life swing vs the dies to
Dark Confidant Accorder. But that's personal preference.
I don't use Aether Vial either

Care to give the reason why Knight of the holy nimbus "isn't that great"
I like it better than accorder paladin. Its harder to kill than usual by removal spells, and w/ that flanking its kinda like a 3/3 considering it takes away 1 toughness. It would straight up kill the accorder, and a lot of other stuff in the early game. sure, you don't get the battle cry, but I'd say that its worth it for the pseudo Indestructible.

Ah, but auto regen gives him lasting power to most removal/battle (unless your opponent pays mana). But knights need better 1/2 drops
Speaking of 1 drops, I know he isn't a Knight, but considering you deck is also all humans as Champion of the Parish could be interesting.

Creatures that aren't Knights are automatically not up for inclusion in this deck. I'm strict with the Knight theme so that every creature can be boosted by Knight Exemplar.
Champion of the Parish is a bad creature. It's only effective on Turn 1 and gets worse after every other turn, becoming a horrid draw in mid-late game.

This is a Pet Deck for casual games, and I'm in the process of completely foiling it out. Not sure if I want to bother with a Sideboard.

As someone who also did what you did with standard knights and turned them into modern knights, you lose game 1 to burn, but if you have a sideboard game 2/3 aren't hard. They aren't knights but putting in 4 kor firewalkers and having leyline of sanctity main or side pretty much ruins their day. Also If you don't like honor the pure, I dropped a couple bladeholds for Light From within(4cost creatures get +1/+1 for every plains in their cost) and may switch to always watching (3cost your dudes get +1/+1 and vig)

I'm fully aware that this deck has no chance against any tiered Modern deck and I have zero interest in altering it to make it competitively viable. This deck is a casual Pet Deck, and I wish to keep it as such.
No interest in Light from Within or Always Watching . No room for them in the deck. Gideon, Ally of Zendikar already provides an anthem effect when needed.

I used to have Honor of the Pure in the deck and I though about using Always Watching for a bit.
Both of them are completely trumped by Gideon, Ally of Zendikar, due to his utility and relevance on most board states.
