Instead of Arrest, play Prison Term. That way, if an opponent plays a better creature later on if they get past your defenses, it could help a lot. Other cars that could help would be the fetch lands, Mana Confluence, and City of Brass so your life can go down even faster.
Anyway, for your sideboard, I would definitely play Path to Exile, Stony Silence, and Terminus. Aven Mindcensor might not be bad also. Oblivion Ring would be good also. Mana Tithe, Dawn Charm, and Rebuff the Wicked can counter the spells in case you or your stuff gets targeted.

I would go with Spellskite or Hex Parasite rather than the Souleater, but that's only if you're not on a budget.

Orbs of Warding is basically a budget Leyline of Sanctity, but it actually works in this deck. Sure, it doesn't have the opening-hand effect, but it does prevent damage. Which is great, because you can put it down to regulate your life total and help you get to 1 more easily. Also worth taking a look at, Darksteel Myr + Worship

I love your deck! If you have a Near-Death Experience your opponent might hold a bolt but otherwise I see no flaws.

Runlue,So we took my version of this to FNM last time and did pretty good. Bad draws led to quick deaths from midrange a couple times. Got chastised for the sheer unfair janky brokeness when I won, easily fending off 160+ goblins (mwahahahah). Anyway, just thought I'd let you know that having a set of Tranquil Cove did the same job as a Gutshot for me. Probably not as applicable since you're mono white. Just a thought.

I have a Near-Death Experience deck that I came up with recently that has turned out to be pretty consistent.

There are A few tricks I've found that I think might be useful:
- Hex Parasite is better than Immolating Souleater. Simply set X=0 when you activate the ability and you can do the exact same thing with a 1 drop that you were previously doing with a 2 drop.
- Pain lands are a better way to get your life to an odd total than Gut Shot. They don't take up spell slots, which can then be used for more practical cards.
- Angel's Grace doesn't do much. Take a few out and put in more gas (or in your case pillows).
