I'm stuck between Borderlands 2, Fallout 3, New Vegas, Dark Souls, and Dark Souls 2.
Please help, I personally have played none of these franchises but have play other hard RPGs which is why Dark Souls is on this list, so don't exclude it for difficulty.
Thanks in advance for all the suggestions.
I recently started playing through Dark Souls, and while it's a challenge, it is definitely one of the most rewarding experiences I've ever had, especially considering that the difficulty in the game is always surmountable if you simply git gud or learn your opponents. You can play however you'd like, but I'd seriously recommend Dark Souls.
I have not played any of the others, so I'm a bit biased, however. Take my advice as you will.
P.S.: If you're in Firelink Shrine and run into some skeletons, you're going the wrong way.

Why only two of them? Most of those can be picked up for pretty cheap, at least for the base game.

New Vegas is one of the best games of all time. Try to get the ultimate edition with all the DLC. Shouldn't be expensive at all. Better than Fallout 3.
Dark Souls 1 and 2 are very different games. I would recommend one of them but do your research before you choose.
Borderlines is very good but not as good as either Fallout or Dark Souls. It's not a bad game at all - but Fallout and Dark Souls are above excellent.

I've played through them all and to be honest I would say new Vegas and the first dark souls would be the best options. Here's why:
Borderlands, while being my all time favorite out of all of these for its art style, dialogue, and the character options; it has one key problem in that it is tedious and boring of you don't play local multi-player. Sure it's OK to play alone but it's kinda like telling yourself a joke.
Without spilling any story, fallout new Vegas is more in krypton with the history and lore of the fallout universe then 3 is. Even without that, the game play and mechanics have a better feel than 3. Also the dlc ranges from fun to outright tear jerking and it does take a lot of hours to complete everything. That being said I personally prefer the music from fallout 3.
As for the dark souls/Dark souls 2 the first one, while very buggy and kinda difficult to play has a better story line and is generally more interesting to play through. Dark souls 2 just feels like more of the same thing with less compelling story and better controls.
Personally though I'm more of an outlier here as I see games as a movie form of pick your own adventure novels and am driven by story over game play so take this comment how you will.

I vote for Fallout: New Vegas and Dark Souls 1. Best games on that list for sure.

Fallout for sure, then borderlands. Never played dark souls(tried the first but found the controls to be terrible for me at least)

Join the club. I can't help on Fallout or New Vegas; never played any of the franchise. Borderlands 2, like all the Borderlands, is fun the first playthrough, then boring. Sure, Dark Souls is hard, but that's because the game only teaches you the basic controls and then throws you into it; they expect you to learn. And if you don't learn you will die. A lot. You'll die a lot anyway even if you do learn. However, it is extremely satisfying to finish.
