I need help coming up with a pareve shabbat dinner idea... the guests this friday are picky
No meat, prep and buying are too much according to my mom
No fish, bro's GF and me don't eat it
Anyone? I'm digging but nothing ATM...

If you have access to a bread machine, homemade challah is super easy, nearly impossible to mess up, and incredibly delicious. It's not a meal, but makes a great addition.

I mean, you could always do a bagel/creamcheese/lox, and cheese spread. It ain't fancy, but it'll get the job done.

slovakattack has a great suggestion. That never goes wrong (except when everything bagels aren't bagged separate from the rest... that gets awkward).

Shakshouka. Basically it's baked eggs in tomato sauce. Sephardic Jewish staple in Israel, though it's usually breakfast. Add salad and some decent bread and you're a hero. Most recipes involve tomato sauce from scratch, but you can buy a jar of decent tomato sauce and add in some jarred roasted peppers, maybe cumin, maybe hot pepper or paprika and you're good to go.

Bagels/cheese spread/lox, Mediterranean Salad (tomatoes cucumber lemon juice) will win, even non-jews love it.

@ miracleHat -- That Mediterranean salad is SO good. Simple AF. Cucumbers, tomato, cilantro, lemon/lime juice, and let it sit for an hour or two. I want to say there was another liquid in there but I can't remember. Olive oil is the obvious guess.
