Would Defend the Hearth prevent damage to Planeswalkers since they are considered "Players"?
they are only considered players that way in the fact that you can redirect damage. thats why planeswalkers are mentioned in the way they are on cards like Fated Retribution , because they aren't players. your better off playing Druid's Deliverance or just simple Fog because they negate all combat damage.

Only non-combat damage can be redirected from a player to a planeswalker, so Druid's Deliverance won't help a planeswalker either. Fog is the best choice.

I thought that was the reason they could be targeted by burn spells like Shock . If this isn't the case then shouldn't a Planeswalker NOT be able to be targeted by Shock ?

I thought all mentions to players in a spells description could be equated to Planeswalkers.

One of the rules for Planeswalkers says that any non-combat damage you would deal to an opponent can instead be redirected to one of that opponent's Planeswalkers. "Bolt your Jace" is just a shortcut for "Bolt you, redirect the damage to Jace as it resolves". The opposing player, not the Planeswalker, is the one being targeted.
You can get more details about the rules for Planeswalkers here.

Planeswalkers aren't considered players, so Defend the Hearth doesn't help them. The only thing planeswalkers have in common with players is that they can be attacked by creatures.
