Does anyone know - if Heartless Summoning is out, and Sun Titan attacks, do the 'converted mana costs' of stuff in the graveyard reflect the HS modified cost? So I could get a 4 or 5-drop back with a Sun Titan attack?

It should be noted that converted mana cost and casting cost are different things. Heartless Summoning uses a reduction effect to change the casting cost of creature spells. This effect does not change the converted mana cost of those cards, which is always derived from the printed value on the card.
Also, Heartless Summoning only affects creature spells you cast. You do not cast the cards you pull back with Sun Titan .

No, the graveyard cards do not change. You are not casting anything when Sun Titan attacks.
