okay so i just started running mimic vat and something came to mind can mimic vat exile a card that has been countered?

No, the card explicitly states 'is put into a graveyard from the battlefield' or the new Oracle version 'dies'.

A countered creature never reaches the battlefield and isn't a viable Mimic Vat target.

It seems you don't yet know what happens when a spell is countered. A creature spell is cast and goes onto The Stack, which is an invisible zone, unlike your hand or the battlefield which can both be seen and interacted with. Then your opponent responds with Counterspell and the creature spell in question is put directly from The Stack into your graveyard. Only spells that resolve (meaning "don't get countered") will end up on the battlefield.

Mimic Vat is a very powerful and underrated card right now in Standard. Keep in mind that you can activate it at the end of your opponent's End Phase and have the token stick around until YOUR End Phase on the following turn. This allows you to make another and swing in with 2 of whatever the token is.
