what kind of options does Mono-Green have for this without splashing?

Beast Within is probably your best option, IMO. At least, off of the top of my head.

or some variety of "target creature you control fights target creature an opponent controls"

fight spells, Pit Fight , Prey Upon , and the like.

If you have a bigger creature you can make them fight her with Prey Upon or Pit Fight

Dismember is a solid answer. Although it costs life, infect decks don't generally worry about it.
