which is better?

whats better for a sideboard Grafdigger's Cage or Rest in Peace ?

It really depends on your deck and what you're trying to do. I would argue Rest in Peace is better because it exiles the cards. This negates cards like Nighthowler , and also avoids graveyard triggers like Voice of Resurgence . But if your deck uses cards with these, then you obviously don't want that.

The deck I want to put them in is A Gentlemens Deck. If you could take a look at it then give me your opinion it would be much appreciated.

Well obviously you can't use Proclamation of Rebirth or Immortal Servitude with either of them. But given that that's the extent of your graveyard interactions, I would recommend Rest in Peace .

If you have something like Nighthowler then creatures still enter the graveyard, so his effect would still be useful. It also costs 1 less cmc. But again, nothing in your deck does that.

Grafdiggers Cage also prevents Birthing Pod and Tooth and Nail shenanigans

The cage doesn't stop Tooth and Nail as that hits the field from your hand as the second part of the entwined effects
