So I got a blank playmat from inkedplaymats.com because my girlfriend is artistic and is willing to do something on it, does anyone know what type of paint or other art medium works on the playmats that won't crack or get ruined by rolling it to put it away?

I think the better option here would have been to have your lady use whatever medium she chose on whatever sort of canvas that she likes, and then send a picture / scan of that in to InkedPlaymats to turn into a mat. I just feel like you'd get a better result that way. Unless she wanted to draw on the playmat specifically, in which case, disregard this post.

I agree with ThatBlueMage. It is also best for her to pay a little extra so that the image becomes properly fitted onto the playmat since scans aren't always accurate. They'll be able to make sure that the image comes out nice, smooth, crisp and clean.

I wouldn't use paint.
Most people use sharpie or fabric markers. You might want to do a quick search on which is more effective. They'll both eventually fade, but nothing will crack.
