I don't know of any lore that specifically mentions anything about Lhurgoyfs, but out of curiosity, is Tarmogoyf a mammal? After all, it's kinda hard to tell...
Judgeing by the scale patterns and outlying spikes... Tarmogoyf is clearly...A MOTHER FUCKING ALIEN!!!

Haha. Mystical beings...aliens, same difference in MTG right?

I almost feel like quoting that, gnarlicide.... almost, I sort of feel it would be subpar based on the rest of your quotes from the evening.

"Large monsters that developed during Dominaria's Ice Age, Lhurgoyfu are monstrous scavengers. They possess two specialized fangs developed for pulling corpses from the ground. They lay incredibly hard eggs, which are mistaken for gemstones by unfortunate travelers."
"Lhurgoyf is an all-color creature type used for cards that depict large, reptilian creatures, with distinctive elongated limbs and large, toothed mouths. Lhurgoyf are primarily scavengers. They come in a wide variety of shapes depending on their scavenged sustenance of choice."
This is what I could find on just the creature type, Lhurgoyf, alone.

I like jandrobard's idea
Oddly enough if watching decks splash green for a two-drop wasn't enough to convince you here's a list of reasons to keep your dinosaurs off crack-cocaine.

A Lhurgoyf, according to the MTG Salvation Wiki, is a "creature type used for cards that depict large, reptilian creatures..."
So technically, its a reptile.
Also, they lay eggs, another distinct characteristic of either a fish, bird, or reptile. Since a goyf does not have fins or wings, it is safe to say that unless he is Knuckles the Echidna's lost twin, goyf is a reptile.

Well seeing as it lays eggs it could be a monotreme (which is a mammal), but the key for me is gem stone like eggs. Their are three possibilities I see 1) the eggs look like gemstones 2) the eggs are hard like gemstones or 3) a combination.
My vote is for option 3. As such I would venture to guess that goyf would fall along the line of aves based on the hard shell and colorful eggs. Additionally it looks dinosaur like which is in the aven line. if the eggs are hard that rules out reptiles since the majority have leathery eggs vs hard shell in birds. Also colorful eggs are more bird like than reptilian.

It's its own unique creature type, just like kavu, slivers or okra (I mean slivers what are they? Are they mamal? Nope. Are they reptiles? I don't think so. Are they bird, fish, crustations? No, no and no. Are they insects? I don't think so but this seems the closest to what they are, they are simply "the chicken of the multiverse" but they taste a bit more like frog legs than chicken so does that mean they are amphibian? No just that they are tasty when cooked right.) now don't get me started on okra is it a squash? Is it a pepper? Is it a fuzzy, slimy gross.....thing give me a nice BBQ sliver thorax any day over okra

Honestly I've always compared Goyf to the Gravemind from Halo, in the fact that it's a sentient mass of deceased organic material.
