Question about Chimeras

My little brother just pointed out to me that Horizon Chimera is weird looking, "It's like a bird and a deer" so I looked up what the definition of a chimera was because based off Fullmetal Alchemist I thought it just meant multiple creatures put together. Online all I could find was a mythological creature that was a Lion, a Goat, and a Snake all put together, usually with 3 heads. So what else is there about chimeras and why do other stories use chimera to mean something different?
