Wither makes alot of sense to me, it takes an extra effort to get back from the grave so thus the creature weakens itself in the process of expending energy. But how does a creature taking lethal amounts damage increase its strength if extra energy is being spent to come back to life?

Probably something to do with black magic and Liliana.

Undying happened on the Plane of Innistrad, which focuses on a lot of humans, zombie, werewolves, andvampires, and angels. I'm willing to believe that the cause of undying was because of necromancers bringing them back to life rather their own energy being spent.

Undying was on Innistrad to play to the horror movie trope of "Just when you killed the monster it's back stronger than ever!" It's also notably only on the monsters of the set and not Humans or their allies.

I imagine it to be among the lines of american fighting/sports movies, where the good guy get's first knocked down/defeated/huminiated, but later returns to kick ass. Just imagine playing "You're the best around" in the background when you bring back Young Wolf. Wait, why does it not have "karate kid" as nickname?

First off Young Wolf's nickname should be Robb Stark. Since in the book/show young wolf was his nickname.
Second I believe Rocknj06 is correct for the most part. Undying was an attribute of things that threatened humanity. In the absence of Avacyn's light the "monstrosities" became more powerful.
Additionally if I remember the specific lore of innistrad it was the plane Liliana of the Veil made her pact with the demons. So demonic Magic is heavily present on the plane

By wither do you mean persist?
Maybe because they become zombies which are typically seen as 'stronger' than the living. I don't know. Guessing.
