Which do you think is better. I was looking into mono blue Merfolk but then I heard you could go blue white. What are the advantages to going blue white, what cards should be in the white version that aren't in the mono blue. And finally which do you prefer?
I've played a lot of modern merfolk and I've also played UW merfolk as well as UB merfolk. Mono blue is strictly better in a vacuum .

It seems Blue-white wouldn't be that hard to do because of Wanderwine Hub but is it worth just the path?

Stick with mono-blue. There's a reason why the mono version regularly top-8s and the others don't.
If you start adding shocks and fetches you're going to start pinging your life away, which isn't good in a tempo deck where you're trying to outrace your opponent anyway. Ideally, a tempo deck is too fast for a Path to Exile to be that useful, and there will always be a better card than Sejiri Merfolk , even if you do splash white.

Pretty much the only reason to splash white is for Thalia, Guardian of Thraben

Thalia will hurt you too though. You don't want to pay two for a Vapor Snag .

i've been running mono blue merfolk for a while after testing blue / white. Even though white is super easy to splash w hub / seachrome / hallowed fountain without losing any speed. It doesnt really perform any better.
thalia / path are both nice but don't really over perform. Typically you'd rather pay 4 life and dismember a creature in your way or combo piece rather than give land advantage and need white mana in play. Thalia can be huge, but really only against storm. Spellskite does a ton more for you vs. Control / combo

Splashing white gives you access to Path of Exile and Sejiri Merfolk and white also has some of the strongest sideboard cards in Modern. Dark Merfolk, splashing black, was also a thing for a while which gains kills spells, discard and Dark Confidant .
Ultimately it's about hedging your bets against the meta, the white splash tends to handle fair beatdown decks better and the black splash pushes for a better game against combo.
At lot of the splashes have fallen away in popularity because it makes the mana base worse and you're giving up the generally powerful mana denial plan of Spreading Seas .
