Which tutors the best to use and also legal in modern? I'm trying to find some for a Sultai Helix Pinnacle deck I've been working on and I'm new to the modern format in general.
I'd suggest looking at the combo decks in the meta for inspiration such as ad nauseam. Some cards that you don't see often that may be worth it are Wishclaw Talisman and though its not exactly a tutor, Serum Powder to help you find your cards. There's also Spoils of the Vault. Mostly though I would second what Caerwyn said.

There’s also Infernal Tutor, but hellbent is kind of a big downside.

Well, lets see. Some of the ones not yet suggested are Gifts Ungiven (which has added functionallity other than being a tutor) all of the cards with transmute, if you aren't looking for Helix Pinnacle in particular you also have Merchant Scroll and Summoner's Pact.

If you're specifically looking for a tutor for pinnacle, there is Idyllic Tutor.

Dizzy Spell works for tutoring Helix Pinnacle.

Idyllic Tutor also works for all the enchantment creatures from Theros blocks which can net you some interesting results.

In Modern, you don't have too many options, and all of them. Just from a brief Gatherer search:
Scheming Symmetry is your only 1-mana option, and, unless you're playing Mill (where it can force them into getting hit by an Archive Trap, this is not going to be a solid option.
At 2-mana, you have no options.
Three+ starts to get too iffy, and generally is not worth it.
So, for Modern, you're probably better off going deep into card draw, and having other useful outlets for mana generation.
