How do you deal with storm decks and graveyard based decks? I'm not looking for help with a sideboard, but as a storm player I'm looking to see what I'm going to have to dodge and evade in my quest for firing arbitrary large quantities of grape based shots at other players.
Osang pretty much nailed it. Some decks with life gain make it hard to storm as well. For example, soul sisters (which has another name now) might force you to take your storm count to 30 or more, which means you can't afford to attempt it twice.

My storm is a bit different, I don't run pyromancers ascension, and Lifegain isn't an issue as it's relatively easy to storm into 30, 40 or even 50 damage with a couple Remand s hitting my grapeshots back into my hands, just to be cast again.
So to be clear, Leyline of Sanctity doesn't see much play? Or at the very least, not enough to justify finding a way around out in either MB or SB?

I haven't seen it around me too much. I can't gauge the Leyline's popularity there.
I completely overlooked the graveyard part of your question. Usually Relic of Progenitus and Grafdigger's Cage do the trick.

Also be aware of cards like Ethersworn Canonist and Eidolon of Rhetoric .

Every Storm-deck should run some non-zero number of Echoing Truth in their sideboard to deal with things like Leyline of Sanctity .

Yeah. I've got 3x Echoing Truth in the SB for dealing with not only twin decks but literally every other threat there is to be played against storm.

I, like most Storm players, use Empty the Warrens out of the sideboard to deal with graveyard hate and Leyline of Sanctity /Witchbane Orb . You just board out your Past in Flames and/or Grapeshot s and then burp out a bunch of tokens on turn three.

RDW/Burn has Eidolon of the Great Revel usually mainboard. I run Faerie Macabre in the sideboard, as it's versatile, uncounterable GY hate.

Is it not a terrible idea for a storm deck to run Defense Grid game 2 to protect them for a turn 3 kill?

I also bring in Rest in Peace and/or Leyline of the Void to kill the flashback portion. Depending on the deck I'm running. I run these because of other gy based decks in my meta, but found them effective against storm also. But they need other pieces of them puzzle mentioned above (espeically r.i.p.))

I use discard cards to discard the combo key spells, then bring in Surgical Extraction , Rakdos Charm and Grafdigger's Cage .

Relic of Progenitus and Surgical Extraction are my sideboard hate of choice. I do play 8rack, so I have a relatively good matchup anyways.

Counter for Storm, and Grafdigger's Cage , Ash Zealot , Ground Seal , Rest in Peace , etc for Graveyard players.

Anything with blue brings in Negate or Dispel out of the board. Tron brings out Defense Grid to add some form of protection on their turn. White has access to Thalia, Guardian of Thraben , making your stuff more expensive. Thoughtseize or Inquisition of Kozilek from black takes out combo pieces and their Abrupt Decay hit Pyromancer Ascension almost all of the time.
Other than that (from the top of my head), they race you.
