If this is your plan, i would add Skarrg Goliath , Prophet of Kruphix and maybe Vastwood Hydra to the list.I don't think it's necessary to use Kruphix, God of Horizons for this tough. I have a G/U Monster deck myself, and Elvish Mystic , Sylvan Caryatid and Courser of Kruphix usually gets the job done. That's just me though.

Red, because you have access to Clan Defiance . That's all you need. You really don't need a third color.

RUG gets you access to some really good big creatures and you can even keep it similar to G/R monsters with a u splash. The other option could be Bant using the mana cache to fuel a big Sphinx's Revelation or keep the mana back to turn Syncopate into a counterspell your opponent can never pay for. You can also hold mana for Cyclonic Rift overload. It just depends how you want to play the deck and work to the color that best fits your needs. From reading the description and wanting to know about big things this can go either way. Let me know what type of deck you want to play most and I can give you more suggestions more focused on what you are looking for.

Red and White both offer some solid options. RUG has Planeswalkers like Domri Rade and Xenagos, The Reveler , plus Mizzium Mortars and Ruric Thar, the Unbowed are nasty sideboard options. With Bant, you can ramp into Sphinx's Revelation and Angel of Serenity , Detention Sphere is solid, plus you have answers for Supreme Verdict such as Rootborn Defenses and Ready / Willing . That all said, straight GU is probably faster and more consistent.

I think just mimic is pretty good, but if i were to add a third colour, red gives you Clan Defiance , an easy win con, white gives you lots of walkers, removal and Sphinx's Revelation , or black could give you some big stuff like Reaper of the Wilds and solid removal such as Abrupt Decay , Vraska the Unseen etc. If just depends on what your deck is lacking.

Wait, Simic needs things? Am I the only one who wins with Simic alone!?

Anyway, a third colour will change the deck a bit.

Adding Red for example adds additional card advantage in the form of Domri and Niv-Mizzet and Allows access to Storm Breath dragon. (If you're not already running Bident and Bred). Both Domri and Niv-Mizzet are fine additions to G/U because Prophet of Kruphix along with Kruphix himself love gaining extra cards to abuse. Also, Horizon Chimera plus Niv works great as well (sometimes life matters in your meta). For three colours, this is my favourite colour Combo.

Black adds a little more death in the mix. Be it yourself with Nyx Weaver, Whip, Scavange or removal in the form of Abrupt Decay Downfall and the new strive kill everything.

White adds, well all the bant things such as walkers, crazy new Ajani comboing and a bunch of good stuff. It also adds Voice of Resurgence, Ephara fleecemane, and honestly Bant hexproof could be a pretty damn good thing.

Simic in general though is pretty much draw cards and beat down. If you're short on cash this a budget deck I've been meaning to take to FNM rather than my usual shenanigans: Star gazing is cheap

Also I forgot to mention but access to red allows access to Xenagos for a flying beat down party and Keranos for a controlish burn your face till you die approach. Also, Kruphix and Keranos work fantastically when paired together.

Xenagod. Although Xenagos the walker plus Kruphix is also really good together. So both.
