How many mountains (or shock lands that are part (?) mountains, not sure what the correct terminology is here, but you should get my point) should I run to warrant the use of Chained to the Rocks ?

I would suggest at least double the amount your running.

2 mountains for every Chained to the Rocks ? I'm thinking about 3x Chained with 8 mountain-shocks.

In a 3-color deck, I prefer a minimum of 10 mountains. For a 2-color deck, your goal is consistency in the first place, so I usually go for 12+ mountains. It depends on the deck you're using and its contents, though, as a white-heavy spell density will lead you to more white-producing lands and thus less mountains.

As an example, my burn deck uses 13 mountains for my Chained to the Rocks .

I have a friend who runs what is essentially a white weenie deck that includes Boros Charm and Chained to the Rocks and if I recall correctly he only runs the shocks and temples. And I can only remember one game where he couldn't get a shock out to use the chains.
