What exactly does a deck need to be standard.. that is, what kind of cards can go in and what cannot? setwise

The standard legal sets right now are:

The RTR Block: Return to Ravnica, Gatecrash, Dragon's MazeM14: 2014 Core SetThe Theros Block: Theros, Born of the Gods

Anything from there is legal- anything not from there is illegal.

Standard is made up of sets from the 2 most recent blocks and the Core Set in between them and rotates every fall when the 1st set of the next block is released. Currently, that would include RtR, Gatecrash, Dragon's Maze, M14, Theros, and Born of the Gods. Journey into Nyx will be added upon its release in May. When M15 releases this summer, both Core Sets will be legal for a few months until rotation.

The most sets available at any one time is right around late summer, after the summer core set comes out, at that time, there are 8 full sets in standard, my fav time to be a magic player, where those who have been playing since the year before can break out amazing combos R&D couldn't have seen coming, things like Wurmcoil Engine and Trading Post overlapping for about 2 months, good times..

sac the Wurmcoil Engine to the Trading Post for card draw, then next turn sac one of the two creature tokens produced when wurmcoil died to the Trading Post to bring back the Wurmcoil Engine . Rinse, Repeat.
