Can I use my creatures to produce mana in response to Day of Judgment?

First of all, couldn't really come up with a proper question title, so sorry about that.

The situation is:

Lets say I have Beastmaster Ascension , 5 Eldrazi Spawns and 2 Birds of Paradise out. My opponent casts Day of Judgment prior to the attacking phase, since he can see what my plans are. My question is then, can I essentially tap the birds (not tapped to attack yet) and sac the spawns to add to my mana pool, and when the Day of Judgment has resolved, then cast various instant-spells like Cobra Trap to get creatures out again?

Most definitely. Timing is everything and in this situation Day of Judgment is the slowest. It couldn't even be cast in response to your described actions to stop them.

mhmmmm...mana abilities don't use the stack, and as such can be activated even when you don't have priority - like while you're paying costs for a spell.
