Can you counter an ability?

And if so, which kinds? Activated, triggered, passive?

There are spells that say specifically which you can counter.

Trickbind , Voidslime , Stifle

In standard currently there aren't cards that can specifically counter an ability at instant speed (that I can think of right now). You can however, respond to an ability as a means of preventing a creature or effect from resolving.

For example if I have a Student of Warfare and decide to level it twice in order for it to become 3/3 with first strike, my opponent technically has a chance to respond to each level up individually. After it becomes level 1 in order to become level 2, my opponent can respond after the first level with something like Disfigure which would prevent my Student from reaching level 2 and becoming and destroy it.

There are creature cards as well that prevent abilities from activating such as Linvala, Keeper of Silence and Tajuru Preserver . Of course these can be countered or removed from the game just as easily as anything else.

As mentioned before, soem extended and legacy cards are more specific than this.
