Can you destroy an opponent’s creatures right before Avacyn, Angel of Hope resolves?

Let’s say an opponent casts Avacyn and then I play Delayed Blast Fireball at instant speed. If my understanding of the stack is correct, wouldn’t the fireball go off first, destroying creatures with 2 or less toughness, and then Avacyn resolves afterwards?

Yes that works. The abilities on a permanent (creature, artifact etc.) only apply while it's actually on the battlefield, unless they're specifically relevant in some other zone (flash, can't be countered, a "cast from exile/graveyard" ability etc.). In your example the opponent's creatures don't have indestructible while Avacyn is still a spell on the stack.
