reguarding espleth-tirel
since her ultimate destroys permanents, what would happen if you had a permanent that was indestructible, would it still be destroyed or no?

to be more specific indestructible permanents can not be put into the graveyard due to lethal damage or destroy effects they can still be sacrificed, exiled, and any form reducing the creatures toughness to 0 which would effectively " kill " the indestructible permanent

Simple method to remember.
"Do not" overrides "Do" effects.
So Indestructible creatures "Do Not" die to damage. but still die to Exile, sacrafice or -1/-1 effects.
So like you asked above, the effect of Elspeth doesn't target but attempts to destroy. So indestructible permaments would still be alive and in play after her effect resolves. (as will any tokens you may have!)

no indestructible permanents would not be destroyed they basically ignore destroy though infect can kill an indestructible creature because it reduces its toughness to zero
