How can you beat Elixir of Immortality?

So, an opponent has an elixir of immortality on the table and enough mana to always be able to use the ability.
If I Shatter it, he can use the ability, gaine the life and save it. If I wait for him to use the ability, then Shatter it, the ability was on the stack and it still resolves, leading to him gaining 5 life. If I cast any sort of spell to take it for myself(say Metallic Mastery , he can tap it, use the ability and render my spell useless.
Is there anyway to stop the opponent from gaining life via the elixir once it hits the table?

Once it hits the table? Not really. Phyrexian Revoker naming Elixir of Immortality could stop it, I suppose, but that seems a waste of a Revoker.
Out of Standard, there's a couple of Split Second cards that could do the trick. Krosan Grip it before they activate it and they can't use its ability in response to save it. Trickbind can counter the ability once it's on the stack, but since neither Trickbind nor the Elixir sends the Elixir to the graveyard, you'll have to bring your own kill spell to the party and that's 1-for-2'ing.
The best way to deal with it is do so before it enters the field, of course. If it's really giving you that many problems there's Memoricide and similar, "find-a-card-and-exile-it" spells.

You're better off just playing around the 5 life than trying to prevent him from gaining it.

Also you can negate it's effects with Leyline of Punishment and Nihil Spellbomb or Leyline of the Void .

I have an absolutely devastating mill deck, but this guy I know uses a white lifegain deck with elixirs. Long story short, He ends up with nothing to draw, and some of his elixirs have been dissipated, BUT THERE ALWAYS MANAGES TO BE ONE ON THE FIELD.

In standard, you can either Cancel it or wait for him to tap out and then Shatter it.
In legacy, you have more options. You can Stifle the ability, then Shatter . Also you could Krosan Grip it.
Yeah, there aren't all that many ways to beat it, Elixir of Immortality should've been a mythic.
