If a card with Epic were to be given Flash, could you cast for than one of them? Or would the Epic ability kick in and counter the next spell you played on the stack?

Say I were to have 12 mana, and I cast a Neverending Torment , and because I have a Leyline of Anticipation out, all my sorceries have flash, I cast another Neverending Torment . Would the first one to resolve stop the other one from resolving, or would I have successfully cast two epic spells?
Oh yes, Twincast does work! I made an epic deck that uses Twincast for a copy and uses Paradox Haze for a 4x effect of the epic spell.

If I'm not mistaken they would both cast. The reason for this is the same reason why you can't counter things with Silence .
You "cast" Neverending Torment , it goes on the stack. Then before it resolves you cast another. The first one resolves preventing you from casting anymore, however you already cast the first one and so it will still get the chance to resolve.
You just have to clarify when you do it that you cast the second one while the first one is still on the stack.
