How does targeting with spells on the stack work?

If both myself and my opponent have a creature out (say i have a Plague Stinger and he/she has a Sakura-Tribe Elder ) If i Doom Blade the Sakura-Tribe Elder and he sacrifices it putting the ability on the stack, and thus activating first would the Doom Blade have to target another creature on the battlefield? namely my Plague Stinger ?

Annotation to Question - say i have a Goblin Bushwhacker out, not a Plague Stinger , bad example.

No, you do not have to choose a new target. When Doom Blade was cast, the Sakura-Tribe Elder existed as a legal target and Doom Blade was put on the stack. If in response the target is sacrificed, when Doom Blade tries to resolve it fails to find its target and is countered as a state-based effect. You do not choose new targets for it.

TLDR: No, you do not choose new targets if the original goes away.
