The Jolly Balloon Man copying crewed vehicles

Like title says: if I crew a vehicle and have it become a creature, it then becomes a valid target for the balloon man's copy ability... I understand that normally, copy tokens of crewed vehicles would enter as an uncrewed non-creature artifact, but does the wording of The Jolly Balloon Man specify that the vehicle copy token also enters as a balloon creature and thus would not need to be crewed to be able to attack? If that is the case, for a vehicle like Luxurious Locomotive, would I still be able to crew the creature token copy to proc the triggered effect?
Edit: Balloon Man makes a 1/1 Artifact Creature - Balloon Vehicle.

Yes. You're correct that a copy of a crewed Vehicle will have the types Artifact - Vehicle and not be a creature since the effect making it a creature isn't a copiable attribute, but The Jolly Balloon Man makes a copy that is a 1/1 Artifact Creature - Vehicle.
You can always still crew it. Crewing a Vehicle doesn't make it lose the crew ability, so you can just crew it more, as much as you want, regardless of whether it's currently a creature. The one wrinkle you should know about is that since The Jolly Balloon Man overwrote its power and toughness to 1/1, these won't change back to 6/5 if you crew it. It will be stuck as a 1/1.
