If my oponnent play echoing truth and target one of my six token human soldier 1/1, can he name a token and activate the ability?

yes he can, the spell will still return the token to your hand the other permanents that share its name, however the tokens will fizzle and will not be in your hand.

Yes. Tokens are permanents, so he can target one of them. However, if a token leaves the battlefield, it ceases to exist and would not go in your hand.

110.1. A permanent is a card or token on the battlefield.

110.5f A token thats phased out, or thats in a zone other than the battlefield, ceases to exist. This is a state-based action.

Also, except for some obvious cases (Helm of Kaldra ) I don't think most tokens get names. An ability which says "put a Soldier token into play" to me means it has the creature type Soldier, but no name.

Actually, they technically are named what kind of token they are. Soldier tokens are named Soldier, Myr tokens named Myr, etc. But it really only comes up with Leyline of Singularity and Maelstrom Pulse.
