What actions can I perform in my post combat main phase?

what is it exactly that you can and cannot do after the attack phase?
can you still summon a creature? can you still use plainwalker's abilities? obviously you can still use instants, but how about sorceries?
etc...?

Yes, you can still do any of that.
In a general turn you have your first main phase, you have your combat phase, then you have a second main phase.
The precombat and postcombat main phases are basically identical, and you can do anything in the postcombat phase as you can in the precombat phase, pending limitations on the cards themselves (some cards say "cast only in the postcombat main phase," for example).
This is a heavily simplified breakdown, and misuses some technical terminology, but for the purposes of this question the technicalities just confuse things.
