Yes. During your opponent's turn, he gets to trigger Mimic Vat first, but you get to resolve the trigger effect first.

Your ruling is correct with one exception. The triggered ability of the Mimic Vat is not added whilst a player has priority.
Instead, when a creature dies the next time a player would receive priority state-based actions and triggered abilities are checked (as they always are) and triggered abilities that have been triggered since the last time a player received priority are added to the stack starting with the active player and going in turn order.
I know it is a bit of a nitpick, and the outcome is the same, but there are some scenarios where it can be important. The major is is that telling players it occurs whilst they have priority heavily implies to them that they can act as per normal during this period which is, of course, not the case. The only thing they can do while adding triggers to the stack is make game decisions required of them by any triggered abilities they are handling.
PS - Also note that when multiple triggered abilities are handled by a single player at once they can choose their relative order on the stack.

The active player's Mimic Vat 's triggered ability would be put on the stack the next time that player has priority. Then, the non-active player's Mimic Vat 's triggered ability would be put on the stack. Since the non-active player's would resolve first, that player may exile the creature sent to the graveyard from the battlefield. If that player chooses to do so, the active player cannot exile the creature.
