When does Smite take place and would a weaker blocking creature die?

Say there is a Kitesail Apprentice (1/1) blocking a Emrakul, the Aeons Torn (15/15).
If I use Smite , will Kitesail Apprentice (1/1) still take the damage?

Smite will destroy target blocked creature first once blockers are declared. Therefore no damage is dealt to blocking creature.

there are timing issues here. You cannot play smite targeting Emrakul as it has protection from colored spells. but if it not was Emrakul.
- attackers step: he decalre attackers : A creature without protection white.
- declare blockers. a. you decalre blockers Kitesail Apprentice
This is legal as that creature was blocked this combat. Result: Apprentice lives.
In either cases the attacker is destroyed(if not indestructible).

Also anihilate happens before u can declare blockers, on end of declare blockers step.
In magic, during actions that do no use the stack, abilities will wait and trigger imediately when one of the players get priority (they are put on stack imediately).
So anihilator will go on stack on end of declare attackers, and before u cand decalre any blockers.

I picked a really bad example as 'blocked creature' I really just meant anything stronger than 1/1

Righteousness x2 on anything with flying = dead emrakul. Ornithopter with a 1/1 counter on him lives!!

Well this resumes as if you want your creature to die or not.
play smite before damage step, your creature lives;
play smite after the damage, your creature dies.

not quite. sometimes you want a creature to die, like a Wall of Omens , to bring him back with Sun Titan
